November meals

Thursday - stir fry
Friday - pumpkin spinach lasagna
Saturday - lasagna leftovers
Sunday - pork chops with apple cider
Monday - pork ramen soup (based on this soup, used with leftover pork chops)
Tuesday - Indian butter chicken curry
Wednesday - homemade mac & cheese (Fast. You mix the cheese with cornstarch and then throw cheese and milk in with the cooked pasta and stir.)
Thursday - shaksuka
Friday - frozen pizza, edamame
Saturday - Swedish meatballs, roasted brussel sprouts, mashed potatoes, cranberry sauce (subbing for lingonberry jam)
Sunday - spatchcock chicken, salad, mashed potatoes
Monday - spaghetti w/tomato sauce and chicken, salad, roasted brussels
Tuesday - salmon cakes

Week 3 - July 20 to July 26

*this is an uninspiring week b/c Hans is working 2nd shift, 3-11PM and I find it very hard to motivate to make a good (read: from scratch, whole foods, interesting, fresh, new) recipe for just me and the girls. They are great eaters, but not so much at dinner. Unless dinner is plain spaghetti.

refried beans//cabbage/sauted mushrooms & zuchinni/tomatilla sauce...call it a fajita

white chili (from freezer)

spaghetti with meatballs (from freezer)

Monday
Charred tomato bisque, used as sauce over rotini and shells (from Mark Bittman's Kitchen Express, cookbook on loan from the library. slice tomatoes, put under the broiler with some smashed garlic cloves till they blacken, puree with cream and fresh basil)
Dutch baby pancake with nectarines for dessert

Tuesday
chicken drumsticks on the grill (Hans home with the girls, Kristen out for dinner)


Wednesday
Bacon, tomato over pasta with an avocado/lime/cilantro sauce (puree 3 ingredients)


Thursday
Jaxons Night Market

Friday
camping - steak, potatoes, veggie kebabs
grilled peaches


Saturday
camping - white chili in dutch oven (make at home and bring with), biscuits on top

eat out - pizza at Mellow Mushroom

Saturday
 Sausage and grape bruschetta on bread (saute ground sausage meat (squeeze out of casings) with red onion, olive oil; after it browns, throw in halved grapes. Saute for a few more minutes. Serve over toast.) - from Mark Bittman's Kitchen Express

 grilled salmon with a pineapple chutney, rice, tomatoes
